Kinshi is the name given to a pressed block of beech shavings that is used as a mushroom substrate for mushroom growers. The Kinshi is nothing more than an artificially produced piece of white rotten/dead wood. In our case, shiitake mushrooms are grown on it by a regional mushroom grower. After harvesting, the fungal mycelia have broken down the cellulose from the beech chips and the Kinshi can then be fed to isopods, millipedes, springtails and beetle larvae. The animals eat tunnels in the block and thrive in the process. The Kinshi is not only eaten with great pleasure, but is also an ecologically sensible alternative to a white-rotted log!
