As
kinshi
is a pressed block of beech shavings used as a mushroom substrate for mushroom growers. The
kinshi
is nothing more than an artificially produced piece of white rotten wood. In our case, shiitake mushrooms are grown on it by a regional mushroom grower. After harvesting, the mushroom mycelia have broken down the cellulose from the beech shavings and the
kinshi
can then be fed to Isopods, millipedes, springtails and beetle larvae. The animals eat their way into the block and thrive in the process. The
kinshi
is not only eaten with pleasure, but is also an ecologically sensible alternative to a white rotten log!
